I was thinking about getting some of these with some ACdelco slotted rotors to go with the hydro boost I'm about to put on. Just wondering if I'll notice a difference from stock, or if any ones tried them before. Thanks guys.

For what you will pay for the parts you can get the Blazer front brake upgrade and it has a bigger rotor as well as dual piston calipers. Direct bolt on and have the car aligned and you're done, not to mention that all the parts are off the shelf replacement parts.

Doesnt that change the steering geomotry

Nope. The S-10 uses the same front end suspension parts except for the sway bar. Control arms and spindle are direct swap parts. The only issue is the bearings because they're a hub assembly. It has some issues but if you don't drive it every day tehy will most likely last for several years without an issue.
