can the mass air flow sensor show his ass without the check engine light coming on?

Ok. What your telling us is you are causing knock by tapping the block. It is not just showing knock on the Scanmaster on it's own. Now that is cleared up. So if cold in open loop you can force knock but if warm in closed loop you can't force knock by tapping on the block? Sounds like when it goes to closed loop it's not getting the correct signal from some of the sensors.
 
The computer will not apply knock retard at idle. The cutoff is 1000RPM typically. In other words, you will never see knock retard under 1000RPM.

You have to prop the throttle open with something to get the RPM over 1000, then tap the block. You may be seeing knock in open loop because it was a cold start and the idle RPM is higher in that case.

Also, there are some chips that may prevent knock retard under certain circumstances. In that case you might want to ask whoever made your chip.

Its a stock chip
 
I have read somewhere that in order to simulate a knock you have to idle the engine at least 2000 rpm and then tap around the knock sensor. You will need another person to see and read the Scanmaster as you tap around the knock sensor.
